The word 'bayou' can conjure images of muddy water, airboats, and alligator tours, but is so much more. The water is so clear in most areas that one can see the bottom. It was vital to bring all elements of the bayou into the restaurant - the elegant and the authentic, the refined flight of an egret and the harsh movement of the alligator, the strong and damaged with the fragile, yet alive.
